How to peel a shrimp Push the shell open with your fingers, starting at the stomach. Gently squeeze the tail to remove the meat.
Grab the shell where it meets the legs ad peel it back.
Remove the shell and the legs. If you like, leave one section of the shell attached near the tail. The shrimp looks better this way.

Important When choosing shrimp, it's a good idea to pay close attention to the grade. The figure in brackets indicates the number of shrimp per pound. So one pound contains fewer colossal shrimp (8-15) than extra-large shrimp (2-30).
What about cooking time? It is difficult to recommend accurately how long to cook shrimp, since the time depends on the size and cooking method. Keep in mind, however, that shrimp are very quickly done and that your best bet is to watch carefully as they cook. Overcooked shrimp lose their lovely succulent texture and become hard.
Tip: Stop cooking as soon as the shrimp change colour.

Here are several suggestions: 1.BBQ or Bake Marinate shrimp in a blend of soy sauce and walnut oil flavoured with a little rated fresh ginger root. Cook on skewers with chunks of pepper and red onion slices. 2. In a saute Cook shrimp in a wok with zucchini rounds, finely chopped onions, broccoli florets and mushrooms. Flavour the stir-fry with lime juice and coriander, and serve on a bed of rice vermicelli. 3. Cook in broth Add shrimp to a vegetable soup at the last minute. 4. Salad Add fresh cooked shrimp to a garden salad.
The perfect pairing! Medium-bodied white wines and light red wines are the ideal matches for shrimp.
