Applesauce Peanut Butter, Chocolate & Dried Fruit Coffee Cake
This moist yet delicious coffe cake is made with whole wheat flour, oat bran, applesauce, peanut butter, chocolate chips and several kinds of dried fruits. It's great for breakfast or a healthy yet tasty snack with a cup of coffee or tea.

Directions
Preheat the oven to 350℉ (180℃).
Add the butter, canola oil, peanut butter, egg and applesauce in a medium bowl, and mix until well blended.
Mix together the flour, baking soda, salt, cinnamon and nutmeg in a large bowl until well combined.
Pour the liquid mixture into the flour mixture, and mix with a woonden spatula until well just incorporated.
Pour the batter into a well greased 8-inch square pan or a similar capacity baking pan.
Bake for about 40 minutes or until a wooden pick inserted in the center comes out clean.
Cool, in the pan, for 10 minutes and cut into squares. Serve warm or at room temperature.
Note:
The cake can be kept in an air-tight container in the frige for up to 1 week or frozen up to 1 month.
You can add whatever dried fruits you like. If you don't have oat bran, you can use wheat bran or ground flax seed meal or ground oats instead.
