Basil Pesto and Fresh Tomato Grilled Cheese

Grilled cheese is probably one of the easiest and tastiest foods to make. The warm-oozy cheese and nicely browned bread are just irresistible. You can add whatever you like in the filling between the bread, extra yumminess is always welcomed.

softened, or olive oil

59 ml swiss cheese
shredded, or sliced

sliced

15 ml butter
softened, or olive oil

Directions

Preheat a medium non-stick skillet over medium or medium-low heat.

Spread two slices of bread with equal amounts of basil pesto, and top one slice with Swiss cheese.

Arrange the tomato slices over the cheese.

Top with the remaining slices of bread to make a sandwich.

Add butter or oil in the preheated pan until butter melts or oil becomes hot.

Place the sandwiches in the hot pan and grill for about 4 minutes, pressing down occasionally, until crispy and golden.

Flip and grill for another 4 minutes, or until crispy and golden-brown.

Serve warm with tomato soup if desired.
