Directions
Preheat oven to 400℉ (200℃).
Coat a pie plate with cooking spray, grease with butter, or use a light coat of vegetable oil.
Layer the first 4 ingredients, onion, red bell pepper, cheese and spinach into bottom of pie plate.
Mix the remaining ingredients, Bisquick baking mix, milk, eggs, salt and pepper with hand mixer and pour over other ingredients.
Bake 400℉ (200℃) for 35 minutes.
Let stand for 5 or 10 minutes before serving.
