Caramel Apple Cheesecake bars
I'm not a huge cheesecake lover because the cream cheese can be a little overwhelming but these are wonderful because it has just the right amount. A brown sugar shortbread crust, smooth cheesecake layer, lightly tart apples, with a crunchy cinnamon streusel all drizzled with caramel. Not a favorite for people that are expecting a cheesecake but I absolutely love these! Easy recipe to prepare for a crowd.

Crust:
2 cups all-purpose flour
1/2 cup brown sugar, packed
1 cup butter, softened
Cheesecake filling:
8 oz cream cheese(softened)
1/4 cup sugar
1 egg
1/2 tsp vanilla extract
Apples:
3 apples (Granny Smith or Macintosh, peeled, cored, and cut into 1/2" or less cubes)
2 Tbsp sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 Tbsp. lemon juice
Streusel Topping:
1/2 cup brown sugar
1/2 cup flour
1/4 cup quick oats
1/4 tsp cinnamon
1/4 cup butter
Drizzle 1/2 cup caramel topping, or melt caramel candy.

Drizzle 1/2 cup caramel topping, or melt caramel candy.
Directions
- Preheat oven to 350℉ (180℃).
- Using a mixer, combine flour, brown sugar, and butter until it comes together. Press evenly into a 13x9 baking pan lightly greased with cooking spray. Bake 15 to 20 minutes or until lightly browned.
- In a large bowl, beat cream cheese with ½ cup sugar using an electric mixer at medium speed until smooth. Then add eggs, one at a time, and then add vanilla. Stir to combine. Pour over warm crust.
- In a small bowl, stir together cubed apples, 2 tablespoon sugar, cinnamon, nutmeg and lemon juice. Spoon apple mixture (juices and all) evenly over cream cheese mixture.
- For the streusel topping: Combine all ingredients in a small bowl with a fork until crumbly. Sprinkle over the top of the apples. Bake for 30 to 35 minutes, or until filling is set.
- Let it cool, then drizzle caramel topping and let cool. Serve cold and enjoy.
