Directions
Add the gelatine and water in the bowl of an electric mixer and set aside for 4 to 6 minutes until water is absorbed.
Coat a 8-inch by 12-inch rectangular cake pan with cooking spray.
Add the sugar, corn syrup and extra water in a saucepan over high heat and stir until sugar is dissolved.
Bring to the boil and cook until the mixture reaches 250 F degrees on a candy thermometer.
Remove from heat and carefully stir in the vanilla beans and extract.
With the mixer on low speed, slowly add the sugar mixture into the gelatine mixture.
Increase the speed and whisk for about 5 to 6 minutes until the mixture is light and fluffy and starting to cool.
Pour the marshmallow mixture into the prepared cake tin, cover with plastic wrap and set aside for about 12 hours until set.
Turn out the marshmallow on a parchment paper or waxed paper.
Use large and small snowflake cookie cutters to cut out shapes and dust with powdered sugar to serve.
Do not refrigerate.
Make 6 large snow flakes or 12 small snow flakes
Notes:
Before cutting the marshmallow, dip the cookie cutters in hot water and wipe dry to prevent it from sticking to the cutter.
