Directions
In a large nonstick skillet or a wok, heat the olive oil over medium-high heat until hot.
Add the garlic and scallions, stirring frequently, and cook for about 1 minute until very fragrant.
Add the rice, stirring often, and cook for 3 to 5 minutes.
Stir in cilantro and lime juice until evenly combined and heated through, about 2 minutes.
Season with salt and black pepper to taste.
Serve warm with more lime wedges if desired.
