Delicious Tuna Melt Sandwiches with Swiss Cheese & Apple
Inspired by Cat Caro's recipe, we made a few changes in our version. These deliciously filling sandwiches are also loaded with good-for-you ingredients. Perfect for a quick-fix lunch or dinner.

Directions
In a medium bowl, add all the tuna salad ingredients.
In a small bowl, whisk together all the dressing ingredients until well combined.
Season to taste with salt and black pepper.
Pour the dressing over the tuna salad, and gently toss until evenly mixed.
To assemble the sandwiches:
Arrange a slice of Swiss cheese on top of two slices of bread.
Toast the bread until the cheese melts. Watch carefully, do not burn the bread.
Arrange equal amount of tuna salad over the melted cheese.
Place a slice of tomato over tuna salad, then top with remaining slice of bread.
Serve with dilled pickles and tortilla chips if needed.
