Directions
Lightly beat egg with a fork in a medium bowl.
Whisk together 1½ cups milk, ⅓ cup sugar and salt in a medium saucepan, bring to a gentle boiling or simmer over medium heat, stirring frequently.
Meanwhile, add the remaining ⅓ cup sugar, cocoa and cornstarch in another medium bowl, and whisk until well mixed.
Pour in the remaining ¾ cup milk, whisk until well mixed.
Whisk the simmering milk mixture into the cocoa mixture.
Pour the mixture back into the pan and bring to a simmer over medium heat, whisking frequently, until thickened and glossy, 2 to 4 minutes.
Remove from heat.
Whisk about 1 cup of the hot cocoa mixture into the beaten egg.
Bring the egg mixture back to the pan and cook over medium-low heat, whisking frequently, until steaming and thickened, 1 to 3 minutes. (Do not let boil.)
Whisk in vanilla.
Serve warm or chilled.
