Bought a small bag of mini cucumbers, made this pickle recipe, and it was sweet, a bit sour and crunchy. Delicious with most of the meals.

Ingredients

CUPS ML CUCUMBERS
or mini, sliced
½ 118
CUP ML WHITE VINEGAR
¾ 177
CUP ML SUGAR
1 237
CUP ML SWEET VIDALIA ONIONS
sliced
½ 7.5
TABLESPOON ML SALT
½ 2.5
TEASPOON ML CELERY SEEDS

Directions

Add the sugar, vinegar, salt and celery seed into a small saucepan.

Mix together the cucumber and onion in a jar.

Pour the liquid mixture over the mixed veggies, and seal the jar. Let cool to room temperature.

Refrigerate at least 24 hours before serving.

For more taste, add garlic, dill, oregano, or hot pepper sauce as your choice.

Not a complete recipe. NO MENTION AS TO HOW LONG TO COOK SUGAR, VINEGAR, SALT, CELERY SEED.

It says cook two minutes, I would think just long enough to boil and flavors to blend.

Do you have to cut cucumbers if they are very small?

The fluid is a very small amount, and does not cover the cucumbers. I thought they had to be completely covered with fluid?

Can I use another type of onion? I live in Australia and have never seen them in the supermarket or at any other market.
