Hope's Biquick Leek Quiche

An easy and tasty Bisquick quiche. Leeks and swiss cheese together make this delicious quiche. It can be served as a side dish or a vegetarian main dish.

Directions

Fluffy in the inside, golden and brown on the outside. Yum!
Time to enjoy it.

Preheat oven to 400℉ (200℃). Coat a 10 by 1.5-inch pie plate or a same capacity square or rectangular baking dish with cooking spray.

First gather together all the ingredients.

In a large nonstick skillet, heat oil until hot. Add leeks and garlic, stirring, and cook until leeks start becoming brown and partially caramelized, about 8 minutes.

Next mince some garlic.
Next prepare the leeks.

Rinse the leeks under cold water.

Time to cook leeks.
Stirring, and cook.

Transfer cooked leeks along with Swiss cheese in a large bowl. Mix until well combined.

Spread leek-cheese mixture evenly onto bottom of pie plate.

Meanwhile in another bowl, beat milk, ricotta cheese, eggs, Bisquick, hot pepper sauce, salt and pepper until smooth.

Meanwhile prepare the liquid mixture.
Whisk well.
Pour the milk in.
Whisk the ricotta in.
Add the bisquik mix in.
Season with salt and black pepper.

Pour into plate over leeks and cheese. Bake until top becomes golden and brown, knife inserted in center comes out clean, 25 to 35 minutes.

Let stand 5 minutes before serving.

Cheesy and flavorful.

When do you add the ricotta? Is it mixed in with the swiss and leeks or is it part of the Bisquick top?

Ricotta should be beat with milk, eggs, Bisquick, hot pepper sauce, salt and pepper. Just edited the recipe, thanks for the comment! Happy Cooking :-)

I made this yesterday and it was delicious. I substituted Carnation Evaporated Milk as I didn't have any milk and it was delicious. Unfortunately, I had to forgo the hot sauce. Thank you for sharing this recipe
