Irish Potato Soup
Traditional and authentic Irish Potato Soup perfect for St. Patrick's Day or any time. Especially warming in the winter. Simple ingredients combined in a belly warming way to maximize the flavor from each of the ingredients.

Directions
Peel and slice potatoes and onions.
Add to pot with water, thyme and the whole clove.
Bring to the boil, reduce heat, cover and simmer for about an hour.
Rub through a sieve or even better a food mill. (You could also use a food processor or blender.)
Stir in milk, salt and pepper. Heat through without boiling, and serve.
Perfect with a dollop of sour cream as a garnish. Serve anytime or on St. Patrick's Day, you could add a few drops of green food coloring if you wish a very "green" soup.
