Directions
Preheat the oven to 420 degrees F.
Line a large baking sheet with foil, parchment paper, or baking mat, or spray with cooking spray. Set aside.
To make the chipotle yogurt dip:
In a small bowl, mix yogurt, chipotle peppers, and garlic until well combined. Cover with a piece of clean pastic wrap, put in the frige until the fries are ready.
To make the sweet potato fries:
In a large bowl, toss the sweet potato strips with olive until well coated.
Add the remaining ingredients, toss gently until well combined.
Place the sweet potato strips evenly on the prepared baking sheet in a single layer.
Bake at the bottom of the oven for 20 minutes, then move the baking sheet to the middle rack, and continue to bake for another 10 to 15 minutes, or until the sweet potato fries are golden brown, and crispy.
Remove from the oven, and let cool on a wire rack on the sheet for a few minutes.
Serve with chipotle yogurt sauce.
