Directions

Brush the pesto on top of each salmon fillet.

Heat the oil in a large, non-stick skillet over medium-high heat.

Cook salmon and scallops; after about 3 minutes, turn over the scallops and cook the other side for another 3 minutes. And salmon is cooked at the same time. Do not burn.

Meanwhile, in another small saucepan, heat butter or oil over medium heat, and cook shallots, stirring often, for about 5 minutes.

Add vinegar and cook for another 2 minutes, then add cream and cook for another 1 minute.

Divide sauce onto 4 plates evenly.

Arrange each salmon fillet and two scallops on top of shallot sauce.

Serve warm.

This dish was easy to make and very tasty. We enjoyed it with pan roaseted vegetables.A quick meal even in the business of a work week.

Not a fan. Shallot sauce was yummy, but salmon cooked in oil with pesto was way too oily. ALso, scallops cooked a lot faster than salmon. Won't make again!

It's a very tasty dish. I added some frozen peas with the sauce and also tossed in quinoa pasta. Just to know its to be served for four is exciting..

Awful, might as well toss a cup of vineger on your scallops and salmon then toss the whole dinner in the bin because it's unedible

If you used a cup of vinegar, it will definitely overpower the entire dish!
