Directions

Pre-heat oven to 350℉ (180℃).

In large saucepan melt butterscotch pieces, sugar and butter over medium heat, stirring constantly.

Remove from heat. Add egg; beat well. Add flour, baking powder and salt.

Stir in remaining ingredients.

Spread in greased 8-inch pan.

Bake at 350℉ (180℃) for 20 to 25 minutes.

Cool; cut into bars.

Makes 24.

I’m 64 years old and having been making these since I was in middle school back in 1968. I first encountered the recipe in a Pillsbury paperback cookbook like the kind they sell at the checkout counter in the supermarket. I have a massive sweet tooth and my mom would not buy candy bars. This is the closest you can get to a candy bar in cookie form.

I made these when i was young, in the 70's. My mom made a cookbook with our favorite recipes, which had this recipe. I recently misplaced the book, so I was pleased to find the recipe on line, as I thought it would be a good treat for Easter dessert.

So happy to find this recipe! My mom used to make these for our family when I was young. I'm 63 now and still remember how yummy they were. I thought the recipe was gone forever, lost in one of my mom's cookbooks. I can't wait to make them!
