Directions

In a large mixing bowl, add onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes, zesty Italian dressing, black beans, black-eyed peas and coriander, toss until mix well and coat evenly.

Cover and keep refrigerated for 1½ to 2 hours.

Toss with fresh cilantro as needed.

Serve.

Is that a traditional recipe or did you just make it up? I didn't know Texans ate vegetables.

I definitely think this is a traditional recipe from Texas, so they perhaps do eat some vegetables :)
