Vegan Carrot Spice Muffins
Fragrant, moist, comforting and best of all...healthy for you and the planet!! You wont believe the amount of carrot, but have no fear...delicious!

Dry ingredients:
1 3/4 cups whole wheat spelt flour (or a mixture of whole wheat and unbleached flours)
1/4 cup natural sugar...I used white Camino...fair trade holla
1 tablespoon ground flax seed
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon ginger
1/8 teaspoon cloves...in other words 'a pinch'
1/2 teaspoon salt
Wet ingredients:
1/3 cup agave nectar...splurge and buy this its great on pancakes
1/3 cup unsweetened apple sauce
1/2 cup soy yogurt...I used plain for less sugar
1/4 cup water
1 teaspoon vanilla
1 1/2 cup shredded carrots (about 3 mediumish carrots peeled)
1/4 cup toasted pecans or raisins...raisins arent my fave but if you like them the spice will work really well with them.
I threw in a sprinkle of unsweetened cocunut cuz I felt like it last minute and it was one of my better decisions.

Directions
- Preheat oven to 400℉ (200℃). Spray a muffin pan with non-stick spray or you can use fancy muffin tin liners...much easier clean up, but if you're going to sit and watch romcoms and eat the majority of them like I do, why waste the liners.
- Mix together all dry ingredients in a large bowl. In a smaller bowl, combine the liquid ingredients. Add the liquid to the dry and mix just long enough to combine, it is true if you mix the batter crazy style they will be tuff. Add the carrots and nuts!
- Spoon the batter into the muffin cups, I filled mine right to the brim–its a super thick batter. Bake for 15 to 18 minutes until a toothpick comes out clean. Any man coming home to the smell of these in the oven who doesnt kiss your feet immediately has issues. These tasty bad boys freeze like beautys. Bam.
