This salty spread uses two types of olives and crumbled feta cheese, but no anchovies. Serve on crackers, toasted sliced baguette or pita chips.
This easy and tasty vinaigrette is so versatile. It can be used as a salad dressing, a light, tasty and refreshing drizzle over cooked fish, or tossed with pasta.
This colorful low fat salad can be enjoyed warm or cold.
Smooth and creamy, fresh and clean. Canned tomatoes work equally as well as fresh.
Rich and packed with flavor but without the unhealthy fats. Slightly sweet carmelized onions and sundried tomatos topped with cheese on crispy toast (crostini).
Creamy and tender stroganoff is one of my favorite comfort foods
Coated with garlic olive oil and mozzarella cheese, topped with fresh arugula that's tossed with a little bit olive oil, lemon juice and black pepper. This quick, easy and tasty summer pizza also can be grilled on a Barbecue. Fresh salad is served on a pizza, sounds delicious!
Frittata is easy and versatile to make, and tastes delicious. Had some zucchini and cherry tomato on hand, also having fresh mint and basil leaves growing in the garden. Needless to say, it came out super delicious.
This easy to prepare dish is an ideal dinner for busy weekdays. It's loaded with goodness. Feel free to use broccoli to replace asparagus.
An American invention, this pasta salad is done right. Caramelized fennel and red onions with sun-dried tomatoes with a light vinaigrette.

Sweet cherry tomatoes, crunchy cucumbers, smoky toasted corn, toasted walnuts, black olives and feta cheese are tossed together with extra-virgin olive oil, fresh lemon juice, parsley and mint, a tasty and flavorful salad that can be served as a side dish or a nutritious and delicious main dish!
From across Northern Italy there are many variations. A rich broth, juicy Italian tomatoes and rich herb simmered for a long time. I used a mixture of sliced mushrooms from my local supermarket and dried lobster, oyster and shitake mushrooms. Then used the mushroom juice in place of chicken broth. Outstanding reduction of rich comfort flavors.

Packed with deliciousness and goodness. A great side dish to go with any main courses, or it can be served as a vegetarian main dish as well.
This is one of my absolute favorite things to make at this time of year. It takes almost no time to prepare, so I’ll whip up a big batch on my day off and then all I have to do when I get home is put it in a bowl or mash it up and put it on toasted bread drizzled with some olive oil. It also makes a great appetizer along with some homemade or store-bought pita chips. Honestly, when serving this as a dip or a spread, I don’t even bother taking out my food processor, I just use the bottom of a glass and mash it a bit.
