Libby's Pumpkin Pound Cake recipe
This is my rendition of a recipe from an old Campbell's Soup cook book.
WOW. This was AMAZING! I got so many compliments on it, and a few people said they liked it better than pumpkin pie. I have to say I might just agree with that. I made it exactly as it said on the recipe, except I omitted the nuts and added a bit extra cinnamon and some pumpkin pie spice to the cake batter.
As I do not own a bread machine, I adapted this recipe to make in my KitchenAid stand mixer using the dough hook. I kept the igredients basically the same, with the exception of adding 1 1/2 Tbs. honey. I baked it in a 9" x 5" loaf pan.

The cake is a lot of work, so I only make it about once a year, but the people that I make it for feel very special.
